Bulgarian Palachinka Recipe

Happy Pancake Day from us here at Balkan Holidays! If you fancy trying something different this year, check out this delicious Bulgarian Palachinka recipe...!

These are simply the most flavourful pancakes ever! The vanilla smell will linger in your kitchen hours after cooking them to keep you in a good mood all day long.

Ingredients:

2 cups wheat flour (250g)
2 and 1/2 cups milk (500ml)
3 medium sized eggs
1 teaspoon salt
1 tablespoon powder sugar
1 teaspoon of vanilla
1 tablespoon of sunflower oil
1 generous tablespoon of butter (softened at room temperature)

Preparation:

1. Put the flour in a large mixing bowl. Whisk the eggs in a cup, and add them to the flour. Add one cup of milk to them, and mix well until homogeneous.
2. Add the salt, the sugar, the vanilla, the spoon of oil, the butter, and the rest of the milk. Mix well until you have a homogeneous pancake liquid. Cover the mixture with a clean towel and leave to rest in a room temperature for half an hour.
3. Grease the bottom of a pan with several drops of sunflower oil and put it on a high heat. Pour with a ladle from the pancake mixture in the pan. Watch for the small pores which will appear on the surface of the pancake, and then flip it on its other side. Repeat the greasing procedure for every two or three pancakes.

This recipe will produce approximately 18 pancakes. Enough for the whole family to enjoy!
